Due to all the fresh produce involved, this salad is packed with nutrients like vitamin-C and A and has a good bit of fiber without the calories or fat. It’s a little bit of salty and sweet and a welcome addition to any summer picnic. You’ll also find it makes a great packed lunch or snack because it’s easy to make and keeps for days in the fridge. Ingredients:
- 1 large cucumber, halved lengthwise and sliced thinly
- 1/4c sweet onion, sliced thinly
- 1/4c red pepper, diced
- 1/2t salt
- 1/4c sugar, or stevia as I prefer
- 1/2t celery seed
- 2T vinegar
- low-fat or fat-free crumbled feta cheese (optional)
The cucumbers release their juices as they sit in the dressing. The longer you wait, the more dressing you will have. This salad is great on top of fresh salad greens with the feta, a little tomato and sliced almonds to make it more of a substantial side salad. It will keep very well in the refrigerator for 4 days.
