This past weekend, in between my many parties (I seem to be hosting and throwing sometimes multiple parties now-a-days!) I had the urge to make something new and use up some wine in the fridge. I had dog-eared a cacciatore recipe I’d read in a magazine – all I needed was to buy mushrooms and I’d have the ingredients to a delicious easy dinner. The crockpot is a wonderful kitchen contraption. Especially this time of year when we craze something warm and comforting, yet cannot slave over it between the holiday preparation. The next time you don’t know what to have for dinner and you can squeeze 10 – mins into your morning to prep this and switch the pot to “on” give this recipe a try. It’s definitely worth it!
Healthy Crockpot Cacciatore
Ingredients:
1 cup marinara
1/2 cup thinly slice onions
1/2 cup red wine
1 can of diced tomatoes (14oz)
1/2 teaspoon dried rosemary
1/2 teaspoon salt
6-8 (depending on how many people you serve) chicken tenders; frozen, thawed
8 oz sliced mushrooms (buy pre-sliced to cut down on prep time)
Directions
Mix all ingredients except the chicken in your crockpot.
Press chicken tenders under the juices, just below the surface.
Cover and cook on low 5-8 hours until the onions are tender and the chicken falls apart with a fork.
Serve with a grain and peas if desired.
