Keeping on my Summer produce kick (why can’t summer be all year long?!  It’s such a delicious season!) another recipe I’ve been living on and created my own twist to is cucumber salad. Being intrigued by cucumber’s super inexpensive price and low-calorie count due to its high water content, I bought a few and began experimenting.  Now I love them for their subtle sweetness and refreshing wet crunch!  This salad is

Cucumber Salad 

Due to all the fresh produce involved, this salad is packed with nutrients like vitamin-C and A and has a good bit of fiber without the calories or fat. It’s a little bit of salty and sweet and a welcome addition to any summer picnic.  You’ll also find it makes a great packed lunch or snack because it’s easy to make and keeps for days in the fridge. Hope you enjoy this Summer superstar as much as I do.

Ingredients:

  • 1 large cucumber, halved lengthwise and sliced thinly
  • 1/4c sweet onion, sliced thinly
  • 1/4c red pepper, diced
  • 1/2t salt
  • 1/4c sugar, or stevia as I prefer
  • 1/2t celery seed
  • 2T vinegar
  • low-fat or fat-free crumbled feta cheese (optional)
Directions:
Combined vegetables in a large serving dish. In a separate bowl, mix remaining ingredients to prepare dressing and pour over the vegetables. refrigerate for 10-20 minutes and enjoy!  Sprinkle with cheese if desired right before eating.

The cucumbers release their juices as they sit in the dressing.  The longer you wait, the more dressing you will have.  This salad is great on top of fresh salad greens with the feta, a little tomato and sliced almonds to make it more of a substantial side salad.  It will keep very well in the refrigerator for 4 days.
