Tonight was a Wednesday night – the one night a week when I don’t have any plans until 7pm.  That gives me a good 2 hours to cook instead of needed supper ASAP. Wednesdays and weekends at home I use to get out my creativity in the kitchen! Often I walk around with recipe ideas and appetites for specific meals I love. If you’re the creative type, you know an idea will eat at you until you bring it to life!  This week I bought some hummus I just loved! With that in the fridge along with some killer veggies, my mind began dreaming up a recipe that I’d first had two years ago at a women’s conference that included broccoli slaw and hummus.  Here is the delicious creation I made tonight:

Chilled Broccoli Hummus Slaw

  • 1 small head of broccoli, chopped finely (you can use store-bought broccoli slaw, but you miss out on the great texture of their buds!)
  • 1 cup shredded carrot
  • 3/4 cup thinly sliced red (and orange and yellow) bell pepper
  •  1 T jalapeno pepper, seeded and finely diced
  • 3 T red onion, diced
  • 2 1/2 T Apple Cider Vinegar
Directions
  1. Place jalapeno, red onion, vinegar and hummus in a bowl until evenly combined.
  2. Mix in vegetables and serve! Great as a sandwich or wrap filling as well as on top of lettuce or by itself.
