My Snow Day This weekend we had a snow day. One of those days that limits your choices of going out and gives you the freedom to just be home.

I love days like this every once and awhile! This snow day I made homemade soups, muffins, put photos in books and relaxed a ton with my roommate.

After making this Broccoli Corn Chowder recipe again and enjoying it all week I wanted to share it with you because it’s so simple and easy to make and tastes amazing.

Broccoli Corn Chowder

Time: Approx. 45 mins; Active Time: 15 mins

Serves: 6

Ingredients

2 large crowns of broccoli, roughly chopped, (3+ cups, can )

1/2 onion, chopped

1/2 t garlic powder or 2 cloves of garlic pressed

Seasoned salt or salt to taste

pepper to taste

1 can chicken broth, extra or water as needed

1.5 cups fresh corn

1/4-1/2 cups milk

Directions

In a large soup pot place broccoli, onion, spices and chicken broth and turn to a simmer.  Walk away and let simmer for 20-30 minutes.

Check on your soup, add water or more broth to make sure the pot stays wet.

When everything is very soft, using an immersion blender (or transfer to your stand up blender) blend until smooth. Add 1/4 corn and milk to your liking and blend again.

Add the remaining corn and heat through to serve. That easy!

Notes: You can add more broth and water to make it less thick if you’d like. Instead of all broccoli, you can add a mix of broccoli and cauliflower. Don’t be afraid to change things to your liking – more herbs, spices, salt, etc. It’s hard to mess up! As usual, it’s super healthy and full of good-for-you ingredients.
